Limoncello


Last night I finished making limoncello using this recipe. I steeped the lemon rinds in grain alcohol for over two months and when I strained them out they were completely white. The result is certainly satisfactory. I would, however, probably use a different alcohol next time. The grain alcohol (essentially everclear) is a bit strong and overwhelming. I imagine a smoother vodka would work better. The extra potency has a tendency to accidentally get you drunk after a few small glasses.

Using vodka makes it MUCH smoother but also increases the perception of sweetness so you may have to adjust your simple syrup recipe to compensate. Another option is to filter your grain alcohol in a Brita filter 5 or 6 times before infusion. That also makes it much smoother, though not as smooth as vodka.

Yeah, you can use it on vodka too. It makes poor quality vodka taste a lot better.
